Chef Dalan Griffin's passion for food began in humble surroundings — crafting tortas in his garage for friends and neighbors — and has since evolved into a celebrated career rooted in both flavor and purpose.

Today, as a respected chef and restaurateur, Chef Dalan brings a refined approach to plant-based Mexican cuisine at his acclaimed downtown Santa Barbara restaurant, Rascal's Vegan, where guests can observe his culinary artistry through an open kitchen window.  Dalan remains committed to community and sustainability, with his announcement of Palma Plant-Based Catering. 

“I want to give back to Santa Barbara, the place that raised me. I’m passionate about making plant-based eating approachable, delicious, and sustainable. It’s not just about the food, it’s about creating a lifestyle that supports healthy living and a healthier planet, one dish at a time.”

When not out working events, he frequently donates his time and talent to local nonprofits, offers educational cooking classes focused on plant-based nutrition for both youth and elders, and thoughtfully sources ingredients from local farmers markets. His work reflects a deep respect for tradition, wellness, and the vibrant bounty of the California coast.
